1-2 Leeks, chopped
3 tablespoons butter
1 Garlic Clove
2 Lbs Potatoes
7 cups Chicken Broth
1 Cup Heavy Cream
Roughly chop the leeks.
Peel then cube potatoes, rinse and drain
Chop 1 garlic clove
Remove Thyme from stems
Melt Butter in large soup pot
Add chopped leaks, garlic and Thyme - cook until soft and wilted
Add potatoes, chicken broth and heavy cream,
Add salt & pepper to taste
Simmer for 30 minutes - do not boil - until potatoes are soft.
With a large slotted spoon, remove the potatoes and leeks - place in a blender and puree with about 1 cup of the soup.
Pour the entire puree back into the sou pot.
Simmer for another 15 minutes over low heat and allow to thicken.
Garnish with Thyme or Scallions
Serve with fresh bread!
May be served cold too!
